Chop House Chef To Open In Heaton Moor

PAUL Faulkner won’t be around to see if the Albert Square Chop House wins Food Pub of the Year at the Manchester Food and Drink Awards later in the month. By then he’ll be ensconced in his own restaurant In Heaton Moor. It’s going to be called Brassica and Faulkner promises that, true to its name, cabbage and kale will crop up on his menus, along with the grills and subtle takes on English classics that have brough him such acclaim at the newest Chop House.

The youthful 42-year-old, who has seen service in Zinc, The Modern and a clutch of prestigious London kitchens, is fulfilling a dream to run his own place. Brassica, with 48 covers, will be situated in the former La Casona tapas bar and should be open by mid-September. The team will make their own ice cream and bread (from a 32-year-old sourdough starter) and front-of-house manager Martin Shaw is a coffee specialist. With Steve Pilling's fabulous Damson a short walk away Heaton Moor is becoming serious foodie territory.
