7 August 2018 by Neil Sowerby

HOT on the heels of Canto confirming it will be opening in September, fellow eagerly awaited Ancoats arrival Mana has announced its launch will be on Wednesday, October 17. You’ll find it in the Sawmill Court development along from Sugo.

Reservations for October and November are being taken from Sunday, August 12 and already it looks a hot ticket with the first Saturday (Oct 2) selling out. Mana tweeted: "We've had a truly mind-blowing day watching all of you amazing people make reservations. From an elaborate idea to now watching our already beloved restaurant being built, we can't thank everybody involved enough and we've only just begun."

Their website promises: “A menu of 12 to 18 plates in quick succession to showcase the best of our island’s produce at any given time of the year.”

Tasting menus only then at £95 a head with various drinks pairings at this cutting edge venture from ex-Noma Copenhagen chef Simon Martin and his team.

In an early Mana Tweet 27-year-old Simon (above), who started his career at the Chester Grosvenor, promised “two state of the art kitchens, a science facility, a research and development facility, indoor garden and aquarium and a place for chefs to have a pre-prep nap!”

Succeeding social media despatches about preparatory pop-ups in Chester or selecting crockery from Michelin-centric potters 1265 Degrees North have further whetted the appetite for the opening. Plus images from their Chester preview pop-up such as the one above – cabbage cooked with pulse over binchotan (Japanese white charcoal), horseradish and kelp.
