Moon Rabbit goes Bundobust for Manchester Food and Drink Festival

MAYBE it’s the ultimate fusion food, a collaboration for MFDF between ‘space age Asian’ eaterie atop Urbis The Rabbit In The Moon and Bundobust, ‘craft beer meets Gujarati veggie snacks’ in a basement off Piccadilly Gardens.

Until now the only thing the places had in common was both being shortlisted for Newcomer of the Year in the 2017 Manchester Food and Drink Awards.

So how did Rabbit exec chef Luke Cockerill come to be putting his own Japanese inspired twist on two menu specials at Bundobust throughout the Festival (September 28-October 9) – Okra Fries and Vada Pav?

Normally the okra (bindhi) is coated in chickpea batter, deep fried and seasoned with black salt and mango powder, while the Vada Pav is a fried spicy mashed potato ball served burger style in a brioche bun with green chutney and chilli. 

The collab was apparently dreamed up by Bundobust manager Chris Botham and Rabbit In The Moon’s bar manager, who are housemates. It will be fun to discover how it turns out. ToM suspects yuzu may be involved.
