Shacking up in Ancoats – Vietnamese food heroes take on Squid Ink site

SINCE the temperatures are reaching Mekong Delta levels it somehow seems appropriate that the ToM is craving sriracha-infused Saigon Summer Salad (pictured). Viet Shack is a source of many delights from arguably South East Asia’s finest cuisine – bahn-mi baguettes, spring roll – and their own twists (chilli dogs and lemongrass chicken burgers).

From his tiny takeaway base in the Arndale Market Nelson Lam has proved a stalwart of the Manchester street food scene, winning the ‘Cheap Eats’ category in the 2016 Manchester Food and Drink Awards, while spin-off project next door Fusion Lab is up for (the more PC) ‘Affordable Eats’ this year. Both offer fast food with a healthy, additive free approach.

Now comes, announced via social media, the inevitable step-up to Viet Shack’s first restaurant in Ancoats – the new indie frontier. Lam and Co are taking over the old Squid Ink site, next to Kettlebell on Great Ancoats Street.
