Gastronomic greats create exclusive summer dishes for Iberica

IBERICA has won the hearts of Spanish food lovers in Manchester. This offshoot of the upmarket London chain has been in Spinningfields less than a year but has already won a place on the shortlist for Manchester Food and Drink Awards Restaurant of the Year.It has upped its game further for the summer with a unique collaboration with the greatest talents in the Hispanic culinary culture – global legends such as Andoni Luis Aduriz (pictured below), Juan Mari Arzak and Albert Adriá.

The 11 chefs, Spanish, Portuguese and Latin American, have created an exclusive gastronomic menu for Ibérica Restaurants. Until 6 September guests will be able to enjoy these delicious dishes at Ibérica Spinningfields. All profits will go to the chef's chosen charity.

Andoni Luis Aduriz | Mugaritz (Spain) Rustic bread with fresh pancetta and spring herbs. 29 June - 5 July

Quique Dacosta | Quique Dacosta Restaurant (Spain) Foie Cuba libre with lemon frost. 6 - 12 July

Joan Roca | El Celler de Can Roca (Spain) Squid parmentier with red smoked Spanish paprika and squid stock. 13 - 19 July

Bittor Arguinzoniz | Asador Etxebarri (Spain) Fresh chorizo tartar. 20 - 26 July

Dieter Koschina | Vila Joya (Portugal) Beef tartare with vinaigrette and anchovies. 27 July - 2 August

Enrique Olvera | Pujol (México) Avocado toast with bone marrow salsa and cucumber. 3 - 9 August

Eneko Atxa | Azurmendi (Spain) Caipiritxa. 10 - 16 August

Helena Rizzo / Daniel Redondo | MANI (Brasil) Oysters with cucumber and lychee pearls. 17 - 23 August

Juan Mari Arzak | Arzak (Spain) Mango, beer and black pudding. 24 - 30 August

Virgilio Martinez | Central (Perú) Razor clam, yellow pepper & black quinoa. 31 August - 6 September
