Super sommelier Garry Clark steps in at Albert Square Chop House

IMPORTANT changes at Albert’s Chophouse. As Taste of Manchester exclusively revealed, head chef Paul Faulkner http://tasteofmanchester.com/chop-house-chef-to-open-in-heaton-moor/ is off to Heaton Moor to launch his own restaurant, Brassica, Stuart ‘Vally’ Valentine has stepped up to take over with Jacques Hilton now his senior sous chef.

But that’s not the most significant change. Newly arrived as restaurant manager is Garry Clark, 43, for a decade legendary sommelier at the Chester Grosvenor Hotel. Before that he got his Michelin star baptism of fire under Gordon Ramsay and later worked at Gleneagles in the Highlands.

Albert’s gained an Award of Excellence from the influential American magazine Wine Spectator in 2013 – an astounding achievement for a restaurant within a year of its opening – and recently retained it. With Clark at the helm cellar standards may soar even higher. Garry is pictured alongside a picture of George Bergier, legendary wine buyer for the Chop Houses. Quite a team.
