My favourite all time place to eat out in Manchester is... Adam Reid at the French. Clean flavours, Imaginative cookery.

The best dish I've eaten in Manchester recently is... I went to Grafene and I had a couple of outstanding dishes. Ben is doing a great job and his time spent with Marc Wilkinson at Fraiche has clearly paid off.

My favourite dining room in Manchester is... I love the new dining room and outdoor Terrace here at Store Street Exchange, but other than that it has to be Tattu.  It's wacky and unlike any other dining room I have been in. It feels like you have been transported to another world when you dine there.

My favourite lunch spot in Manchester is... Hispi. Love going here for lunch and the unpretentious yet precise cooking is something which excites me every time I visit.

If I had to eat only one thing for the rest of my days it would be... The salt-grilled Carabinero prawns (above) at Umezushi, Could eat these things all day every day.

Stuart Fox is the executive head chef of Store Street Exchange restaurant on the ground floor of the DoubleTree by Hilton Hotel by Piccadilly. The menu has been refreshed for summer with seasonal dishes and vibrant new cocktails which can now be enjoyed on their new, revamped sunny terrace.
