Named after the super-fine Italian flour grade 00, this back to basics pizza joint combines a slow-rise sourdough base with a super fast bake in a Napoli-style wood-fired Stefano Ferrara oven. Ingredients are equally authentic – Caputo flour, San Marzano tomatoes and nduja (fiery Italian sausage). This who aren't Italian sticklers should go for the Tropical with its Hawaiian style caramelised pineapple. The setting is all pretty rustic and with no bookings you may have to queue. Still it's BYO, which adds to the allure for TOM.
