A Champagne toast to Perrier-Jouët’s ‘rewilding’ Garden of Wonder in Refuge

FORGET that puny happy hour Prosecco. ToM likes nothing better that interacting with Champagne in a beautiful setting. So when revered house Perrier-Jouët asked us to give our opinion of their newest cuvee Blanc de Blancs NV alongside an installation celebrating “abundant life in urban landscape” it was no  hardship to answer “Mais, Oui”.

With impeccable good taste they’ve chosen the Refuge Winter Garden in The principal Hotel to create their Garden of Wonder, which opens to the public on Friday, October 27.

The decorative garden is situated in the middle of an 18-seater table, perfect for guests to take it all in while downing a glass or two of the100 per cent Chardonnay Blanc de Blancs. And, of course, partner it with a few of Refuge's renowned small plates.

What they will see? “Highlighting the concept of ‘rewilding’, the garden features flowers, plants, herbs, grasses, miniature trees and flowing water, animated by a breeze that will gently billow across it, rustling the grass and leaves,” says the eco-friendly press release. 

“Above the garden, suspended from great branches of willow hang the sky gardens; ferns and flowers with elegantly twisted branches create a canopy over the entire installation. This exquisite habitat will ignite the senses and encourage visitors to take a moment to carry the message of sustainability beyond the garden.”
