AUTUMN EATS: Tender restaurant reveals latest menu update

17 October 2025 by Rhiannon Ingle

Stock Exchange Hotel is ushering in the Autumn with a brand new seasonal dinner menu, chef's tasting menu and breakfast menu, all available to enjoy in the beautiful surroundings of tender restaurant.

Crafted using the best ingredients of the season, the new dinner menu is the latest evolution of Niall Keating’s culinary vision for tender. With big, bold sharing plates sitting alongside stunning dishes for one and a new small plates menu, there’s lots to love about this seasonal collection full of the warmth and joy of Autumn - a true reflection of Keating’s approach: considered, creative and utterly delicious.

The new ‘dishes for one’ collection is brimming with flavour and seasonal dishes that balance elegance and comfort. Hearty plates like the local venison served with roasted black mission fig, blackberries, pearl barley and port jus showcase the depth of seasonal flavours, whilst there is still space for delicate seafood like the John Dory with charred leek and roasted Scottish scallop and sea urchin beurre blanc.

The large plates menu is another showstopping collection by Chef Keating with big, bold cooking and flavours to match. A whole seabass comes wrapped in its parchment paper straight from the kitchen and served with a fennel, hazelnut pesto and Amalfi lemon. The new whole grilled squid is stuffed with tomato and fennel barigoule. Meanwhile, the T-bone steak is the ultimate decadent sharing dish, served perfectly cooked on the grill and ready to be paired with chips, handmade sauces and seasonal vegetables.

To finish, guests will find an exquisite collection of desserts that are 100% worth saving space for. A beautifully baked Victoria plum clafoutis is the ultimate autumnal pudding  - a delicious warm hug of a dessert paired with Pistachio ice cream. The delicately poached pear with caramel, tonka bean and vanilla ice cream offers a combination that feels both comforting and quietly luxurious. The Paris-Brest with chocolate ice cream and white chocolate sauce is a showstopper, while those who prefer a savoury finish can linger over a selection of British cheeses with crackers, chutney and grapes.

Dinner is served at tender from Wednesday - Saturday 6pm - 9.30pm.

Tender is also launching a special Autumn Chef Tasting Menu - a curated selection of dishes crafted by Niall Keating for the ultimate autumnal dining experience.
