If you’ve ever tucked into one of Brewski’s viral food trays or indulged in American Pies’ unapologetically decadent creations, you’ll know these guys don’t do things by halves. This autumn, they’re bringing their latest venture to Salford’s Quayside - and it’s set to be a BBQ lover’s dream.
BIG TRAY BBQ is the name, and it’s exactly what it sounds like: counter-service smokehouse vibes with meat by the weight, homemade sides, and sauces bold enough to need their own postcode. Inspired by Brewski’s culinary road trip across the USA, expect a mash-up of classic Texan smoke and new-wave BBQ flavours.
On the menu? Think 16-hour brisket sliced fresh to order, jerk chicken sausage, smoked birria lamb shanks, racks of ribs, and hot honey jalapeño cornbread. It’s BBQ with Brewski’s signature big-portion swagger – trays piled high and unapologetically messy.
The new 5,235 sq ft venue joins the growing Quayside food scene alongside the likes of Kargo MKT, Pizza Express, and Turtle Bay, adding a smoky, meaty edge to the line-up.
Co-founders James Daly and Steven Stockton-King said: "We’re buzzing to launch BIG TRAY BBQ at Quayside later this year. Staying true to our Manchester roots was important for us – this is about bringing something new, bold and exciting to Salford’s evolving food scene."
