Fans of seafood will delighted that black cod and snowfish are on the menu at Vermilionâs new Taste of the Sea gourmet evenings. Achieving stellar status at London fusion restaurant, Nobu, black cod arrives in Manchester as part of two special seafood menus at the east Manchester Thai restaurant.
No relation to our own cod, black cod is a native of the south Pacific. At Vermilion executive chef Chatchai Jamjang, marinates it with thai herbs, before slowly grilling the fish and serving it on a bed of papaya and carrot salad with three vegetable sauce, as the centre piece of The Taste of the Sea Luxury Menu (£49 per person). This four course banquet based upon unique and rare fish dishes, with a range of starters and mains to share.
Snowfish, otherwise known as sablefish, is equally exotic to our shores. The nearest equivalent is succulent, wild sea bass. At Vermillion itâs served in a dish called Gintara Sam Rod which includes green and red peppers, topped with a chilli sauce. It is one of the mains on the Taste of the Sea Menu (£29 per person).
Chef Chatchai Jamjang was born in Thailand 41 years ago but has honed his culinary skills across the globe. For the past 20 months he has fronted the kitchen at Vermilion, which is lauded in the Good Food Guide and Michelin. Vermilion also has one of Manchesterâs most opulent bars, Cinnabar, on the floor above the restaurant. With âcocoonâ? seating areas, decadently low lighting and lashings of taste, the cocktail lounge was created by Miguel Cancio Martins, who designed Parisâs legendary Buddha Bar.
