Blinker - Manchester to get another world class independent cocktail bar

Not long after Manchester celebrated the fact that two of its independent cocktail bars were included in the recent list of Top 50 Cocktail Bars in the UK (Speak in Code at number 10 and Schofield’s Bar at number 16) we hear that there will soon be another new arrival to the city’s burgeoning cocktail scene.

Blinker Bar which plans to open in May 2022, will focus on serving classic cocktails, but will also offer an additional menu of reimagined classics, determined by seasonal British produce.

Blinker’s owner Dan Berger was formerly Head of Bars at The Ned, London’s impressive five-star hotel and restaurant complex. Dan has also worked as Bars Manager at The Gordon Ramsay Group and has returned to Manchester after seven years working in some of Melbourne’s most famous cocktail bars. 

After a long search for the perfect location, Blinker will finally open on Spring Gardens this May. Located at the top of King Street, close to Hotel Gotham and Six by Nico, Blinker Bar should fit right in as Manchester’s pre and post dinner and all-day cocktail spot for those who appreciate a well-crafted beverage and great service.

The name of the new bar has been inspired by a lesser-known classic cocktail, 'The Blinker’ which balances rye, grapefruit and raspberry in perfect harmony to produce well-balanced drink. This idea inspired Dan’s desire to have seasonal approach to perfect serves where four flavours will be highlighted each month from fruit grown in the UK. Sustainability and simplicity also reflect what Berger hopes to produce in this high end yet approachable cocktail bar concept.

The bar will boast a vast selection of hand-picked top end spirits from all over the world, while the bar’s interior will feature a combination of up-cycled furniture and sustainable materials, with inspiration being taken from some of the best bars across the globe.
