WHEN ToM hasn’t even ordered its 2018 desk diary an email drops, heralding the first great dining arrival of the New Year. OK, Norse at Harvey Nichols Second Floor Bar and Brasserie (Friday, February 2) is only a one night pop-up, but it’s a hot ticket.

Second Floor head chef Matthew Horsfield joins forces with Norse Head Chef Simon Jewitt to create a seven course tasting menu, inspired by traditional Nordic cooking methods. It all costs £50 a head, including an arrival drink.
Start the evening with a welcome drink from Hops Grape Spirits before discovering the Scandinavian techniques of curing, pickling, fermenting and dehydrating that have been used to create an array of dishes including:
Crispy Jerusalem artichoke, pickled mussel and burnt cream; braised ox cheek with smoked beetroot and woodruff broth; confit yolk with smoked bacon jelly and grilled little gem; Norwegian Skrei cod with salsify and lovage buttermilk; venison and Jerusalem artichoke with stout onions and kale; finishing with birch sap with buckwheat and cultured cream.
