THE arrival of Hispi in Didsbury is getting palpably closer with the announcement they are taking bookings later this week (beginning September 5). We also like the specimen dinner menu they have posted on Twitter (see below).
The crowdfunded bistro will open in the former Jem and I premises on Friday, October 7 after supporters pledged more than £50,000 towards the project through a Kickstarter campaign. It’s the third venture by high chef-proprietor Gary Usher after the success of Sticky Walnut in Hoole, Chester, and Burnt Truffle in Heswall, on the Wirral and is expected to follow their familiar pattern of starters under a tenner, mains under £20, all cooked with light hand and a command of classic French techniques.
Hispi cabbage is expected to feature, of course – charred with pickled walnut dressing and malted croutons (£6.50). The main picture features, with beetroot, sticky walnuts at that eponymous restaurant. Usher is loyal to his roots!
A Didsbury lunch menu will also be available offering two courses, provisionally for £15 or three for £18. We impressed by the wine list at Sticky Walnut, so all in all this is an exciting development for culinary moribund Didsbury (commiserations to Chorlton, who thought it was coming their way).
