PROPER pastry chefs are to be treasured. When Andrew Green headed up the Lowry Hotel kitchens he had a pastry team to be reckoned with, creating perhaps the best afternoon tea in town.
Now at his new billet, Mamucium at Hotel Indigo he has given in-house pastry chefs Megan Chester and Morgan Mole a chance to unleash a decadent rival tea, available daily in the more casual M Cafe. At £14.95 a head it looks a bargain.
For the new Afternoon Tea Manchester’s iconic soft drink has been the inspiration for the show-stopping Vimto Macrons, These are accompanied by mini Manchester Tarts, delicate Lemon Choux Bun, and rich Chocolate Orange Opera cake. An of course, an Afternoon Tea staple, fluffy home-baked scones topped with Chantilly cream and served with an assortment of jams.
For the savoury tier expect chunky tuna and feta wraps, mini Lancashire oven bottom muffins filled with locally sourced honey roasted ham and pickle, Goosnargh egg mayonnaise, wholemeal sandwiches and open-topped rye bread sandwiches of soft cream cheese and Manchester Smokehouse salmon, from, the city’s only salmon smokery.
The salmon is also treated using a secret curing recipe before being hand-filleted and plunged it into salt for an undisclosed amount of time – and there’s no added sugar, as you often find with cheaper supermarket cuts.
The Afternoon Tea is also served with a choice of either single origin coffee from Salford Roasters, or a selection of loose-leaf teas from Denton-based Tea from the Manor. Guests can also add on a glass of fizz for an additional £4.50.
