THURSDAY, December 17, marks the official launch of the next generation Salvi’s Mozzarella Bar. The much-loved Italian cafe takes up residence again in the Corn Exchange, now across two floors with an extended 40 cover outside drinking and dining area on Exchange Square.
Another new arrival will be the Corn Exchange Forever Manchester Kids Pizza, created to celebrate the return. Two Oldham families, from a neighbourhood where community charity Forever Manchester has been funding lots of activity, headed to Salvi’s Cucina restaurant on John Dalton Street to take over the kitchen.
The children worked with owners Maurizio Salvi and Claire Wheeler and the Salvi’s chefs to design the new pizza for the Corn Exchange menu with 50p from every one sold going to Forever Manchester. The kids, of course, are invited to the new restaurant to check out their creation!
Claire said: "We've always been a family-friendly restaurant at Salvi's – Italian dining is all about family after all – but we've never really created a dedicated dish for the kids before. This group were fantastic mini masterchefs and have really helped us to perfect the ultimate kids pizza.”
Downstairs the new Salvi’s will boast an augmented deli space with a full range of Italian goodies from new producers, in-house cooked dishes and, naturally, their own artisan buffalo mozzarella, made by Maurizio’s brother near Naples..
The cafe menu will feature deli boards along with panini, antipasti, nibbles and anything else from the counter that catches an eye.
An open kitchen will be at the heart of the action, serving up simple but exceptional pizzas and pastas, and daily, traditional, Neapolitan dishes chosen from Maurizio’s mum’s recipe collection – often cooked by her own fair hand, she acts an ‘executive chef’.
Welcome additions are larger, comfy leather booths and private dining area plus – TOM is getting excited now – a Wine Room. This perfectly acclimatised space will be available for private parties, meetings and specialist wine tasting and food matching sessions.
