Kampung Bayan pop-up – From Penang to Manila at Takk

3 July 2019 by Neil Sowerby

MAMA Z and Woks Cluckin are joining forces for another exciting six course Kampung Bayan Supperclub at Takk, University Green on Saturday, July 13

It’s the latest in a series of special collabs, showcasing the best of Nyonya and Filipino cuisine through shared memories, recipes and stories from both street food traders’ family kitchens.

'Nyonya' derives from the Straits/ Peranakan-Chinese community and refers to the descendants of 15th Century Chinese Immigrants who moved to Malaysia from China. Yen (Woks Cluckin) will be making dishes from her home town of  Penang. To complement this Zosima (Mama Z) will recreate dishes from her travels in The Philippines, a melting pot of food influences from its many settlers.

We love the sound of the six dishes on offer: Kueh Pie Tee (crisp pastry shells filled with a spicy, sweet mix of veg and prawns); Filipino fave Fish Kinilaw Ceviche and cassava crisps (above) where fish is marinated in coconut milk, garlic, chillies and vinegar; Pork Inasal and Chicken Satay Skewers with mango salad; traditional Malay flatbread dish Roti Canai and Curry; Sambal Egg and Steamed Rice; Pandan Cream Puff and Ube (purple yam) ice cream.

Kampung Bayan, Saturday, July 13. Two sittings. 5pm and 8pm. TAKK, University Green, 138 Oxford Road, Manchester, M13 9GP. £25 plus booking fee, get tickets here
