Mango and Rose Dosa is Bundobust’s Pancake Tuesday special (and beyond)

A PANCAKE is not just for Shrove Tuesday. Indeed any number of American-inspired brunch joints toss the batter yearlong. But ToM’s own favourite take on this object of desire doesn’t come with maple syrup and bacon.

The classic South Indian Dosa, now a staple across the Sub-continent and a great vegan option, is made from fermented rice flour and urid dal. We love these long, lacy parcels, filled with spicy potato and accompanied lentil sambar and coconut chutney.

At Bundobust, you get a smaller but perfectly-formed version. One that’s suited to culinary improvisation this Pancake Tuesday (March 5). The chefs have created a dessert version, flavoured with mango pulp and rosewater. They're served with shrikhand – a sweetened cardamom yoghurt –- mango ras, pistachio and pomegranate. Just £5 (and gluten-free). Even better news. They’re available in the award-winning basement bar until Sunday, March 10. Not sure what craft beer goes well with it. Ask the staff.
