PERSIAN BREAD KITCHEN: Jaan by Another Hand joins Exhibition food hall

Jaan by Manchester legends, Another Hand, have now set up a full-time spot in the buzzing Exhibition food hall.

Replacing the cracking Japanese pop-up, Etana, the 'Persian bread kitchen' will be serving up some proper good flatbreads, topped with Middle Eastern-inspired goodness with an ethos of sustainability at its very core.

Snacks, which start from £5.50 a plate, include pickled Shetland mussels served with za'atar, creme fraiche, lemon whipped butterbean, charred onion chutney and sumac alongside the smoked aubergine with macadamia and wood sorrel as well as the gorgeous smashed cucumber seaweed served with elderflower.

Larger plates start from £8.50 and include slow-cooked lamb shank, black garlic cheese bread, beef tartare, fire-roasted sea trout, scorched summer squash, chermoula chicken and grilled octopus with nduja.

And, to top it all off, you can choose from an array of 'bastani' - or Persian ice creams including; strawberry hibiscus with pistachio, Pine with cherry and chocolate, lemon curd with butter cookie and thyme caramel and a

drunken prune with pineapple and pink peppercorn.

Another Hand writes: "Sustainability is the focus of our menu at Another Hand. Produce is sourced locally with the vast majority traveling no more than 40 miles, and all efforts are made to use every element of an ingredient. However diners habits, expiration dates and reasons beyond our control means things will always go spare.

"That’s why we decided to open Jaan, a bread kitchen that will act as an extension to the restaurant taking unused or unsold produce from one kitchen to another."
