Peruvian pop-up for Sandinista basement

NO guinea pigs will be consumed in the basement of Sandinista when it is transformed imminently into a Peruvian pop-up. The popular pet may be on the menus of many an Andean eaterie, but don’t expect to see it at Mama Pacha, brainchild of the Latin American themed bar’s head chef Jose Wong. 

Reassuringly, his new venture – named after the Mother Earth Goddess – will offer ToM faved ceviches, chicken and beef stews and, pictured above, yummy looking roast pork belly, mashed sweet potato, amarillo chilli and red onion escabeche, washed down naturally with  Pisco cocktails.

Of Italian and Chinese heritage chef Jose was born in Peru and many of his dishes were inspired by his Mama, hence the name. His intriguing pop-up should be up and running before the end of May.
