There have been a few changes within the award-winning San Carlo Italian restaurant group over lockdown.
When Government guidelines finally allow restaurants to reopen fully on 17th May, guests dining at Fumo on St Peter’s Square will discover a new name and a new menu of fabulous dishes. They have done away with the small plate cicchetti style dishes, in favour of a classic Italian starter, main and dessert menu.
Guests will be able to choose top-of-the range antipasto as well as fresh seafood, opulent pasta, and proper pizza. There will also be some spectacular new insta-worthy sharing dishes like Fumo porcini risotto – black truffle risotto with mushrooms served IN A WHOLE PARMESAN CHEESE as well as a grand sharing spaghetti frutti di mare –with clams, mussels, prawns, garlic and Datterino tomatoes covered in pizza dough and oven baked (main image).
More changes have gone on in the kitchen too with the installation of a new robata charcoal flaming grill. Robata grills are revered by chefs across the globe for enabling them to get the best out of meat and fish which becomes rich and smoky on the outside, but tender and juicy on the inside – not easy to do in a home kitchen, which is why we’ve missed restaurants.
The new grill menu will include a range of top quality steaks - including ribeye, sirloin and fillet, plus Tuscan fennel sausage with friarielli (Italian broccoli) or the San Carlo Aberdeen Angus burger topped with burrata, balsamic onions and grilled Parma ham. If you really want to go all out, you can order the lot in the form of a mixed grill – steak, lamb cutlets, chicken breast AND Tuscan sausage, or San Carlo’s famous bone in tomahawk to share.
The new robata grill elevates fish and seafood too. The new menu will feature a whole seabass with gremolata dressing, grilled lobster with plain or garlic butter and Argentinian prawns chargrilled with garlic and chilli.
Some signature San Carlo favourites will also feature, including truffle ravioli and spaghetti lobster, salt baked sea bass along with vegetarian and gluten free pasta options.
Fumo’s cocktail and aperitivo list will be on sparkling form as ever as well as a fine list of Italian wines (some of which are exclusive to the San Carlo Group) and of course, bubbles.
Fumo Bar and Grill will open from 12 until late seven days a week. Weather permitting, the alfresco terrace will also be open with new parasols and a refreshed look. Resident DJ’s will be back on Friday and Saturday evenings playing a soundtrack of chilled Mediterranean beats to get weekends started right.
