Spanish tapas masters La Bandera set out their stall in the Arndale

THINGS are looking up foodwise in Manchester Arndale with the arrival on its ‘South Side’ of a street food outlet of Ridgefield’s outstanding Spanish retsaurant La Bandera (ToM review gave it five stars).

They are promising to serve our special fave (below), carrilleras de cerdo – Iberian pig’s cheeks slow cooked for eight hours, first in a veg bouillon then in a Pedro Ximenez sauce, its “treaclel/prune flavours pervading the melting flesh”.

Cooking these and the likes of fried squid with lemon alioli in a squid ink black brioche bun is chef Alberto Ruiz Murillo, who worked under David Muñoz, owner of three Michelin stars, at his StreetXO restaurant in Madrid.

The emphasis will be on a daily changing menu of small plates to carry out or taste in the shared seating area. Sounds a credible alternative to Subway, shoppers.
