LOS Tres Mosqueteros – Nacho Manzano, Cesar Garcia and Nacho Linares. When Iberica celebrates its swashbuckling spring menu it rolls out the big guns. Respectively their Michelin triple-starred exec chef from Asturias, group head chef and Manchester head chef.
Between them at Spinningfields’ little corner of Spain they served an array of dishes from‘Much-loved Classics’ patatas bravas, chorizo and albondigas to ‘Contemporary Tapas’ embracing beef tomato and salmorejo, Cantabric tuna salad, pear and spinach salad and more before an iconic main of Pluma (100% Iberico pork served with Mojo Rojo sauce, rosemary potatoes and peppers (above). It was very much a back to basics (and no harm in that) dinner in contrast to previous ‘Nacho and Friends’ occasions when Spanish culinary superstars such as Quique Dacosta, Oriol Castro, Eduard Xatruch and Mateu Casañas flew in to join Manzano in the kitchens for cutting edge explorations of their cuisine.
This was simpler, more direct food with matching wines that showed off the quality of the all-Spanish list. Perfect for toasting spring, in fact.
