My favourite all time place to eat out in Manchester is... 

Tough one but apart from Randall & Aubin, which of course is my favourite, down to the fact I know and understand the integrity in the menu, the sourcing of fine pure healthy ingredients and my seafood eating ways.  As a chef I am always out looking for authentic cooking and something a bit alternative to what I do, so it has to be Happy Seasons restaurant for dim sum followed by BBQ Roast Duck 

The best dish I've eaten in Manchester recently is... 

Roasted wild turbot with Romana artichokes, green beans, potatoes in fine herbs vinaigrette with a truffle beurre blanc. No prizes for guessing where I ate that! 

My favourite dining room in Manchester is…

Grand Pacific (above) – a stunning, imposing building and a great representation of Manchester at its best, 
My favourite lunch spot in Manchester is... 

The Restaurant Bar & Grill.  A great, comfortable elevated spot to sit back and watch the world go by in huge sofas.  
If I had to eat only one thing for the rest of my days it would be... 

Tough! Probably grilled fresh fish with lemon or my guilty pleasure, Greek gyros, although on a diet of gyros the rest of my days would, I think, not be that long.

Randall & Aubin launched in Manchester last year two decades after the original was  founded in Soho by chef Ed Baines, best known as judge on ITV’s Britain’s Best Dish.
