If I had to eat only one thing for the rest of my days it would be… Veal saltimbocca, spinach and saute potatoes.

Yorkshire-born Simon Shaw’s take on Spanish food, El Gato Negro, made a triumphant transition from the Pennines to King Street in central Manchester. His latest project, Canto, an adventurous interpretation of Portuguese food, is in Ancoats, home to some of Manchester’s most exciting new projects. The food there is entrusted to Carlos Gomes, Porto-born and former head chef of Michelin-starred Barrafina in London.
