The Laureate launches new menu inspired by homecooked family favourites

Inside Manchester’s Hyatt Hotel you’ll find The Laureate, an elegant restaurant specialising in a vast menu of international dishes. Always seeking to find inspiration in its people and surroundings, the restaurant has launched a brand-new menu that has been influenced by family recipes found in the homes of its kitchen team.

Heading up the operation, Manash Kolaparth-Muthuvana called upon his talented colleagues to recreate their favourite childhood recipes as house specials, with some dating back as far as three generations.

A nostalgic challenge for the chefs, the outcome is a menu that features a a hand-picked selection of mouth-watering dishes that pay homage to the vibrant, eclectic, international influences the team brings.

Sous Chef Vikas proudly showcases his Indian roots with two new dishes — a prawn biriyani, served with traditional Indian Kaima rice, and the satay chicken supreme.

Home cook Joy who comes from a family of chefs has created a fragrant Thai green chicken curry which is made using home-grown Kaffir leaves, ensuring it gets the essential seal of approval from grandma herself.

Originally a butcher, Syrian-born Abd is responsible for both the new mezze and the Arabian mixed grill sharing platter. The platter features chicken shish tawook, beef kebab and lamb kofta, which is accompanied by homemade Moroccan Khobez bread.

Head chef, Manash said: “Our team have a passion for creating dishes influenced from their past and we are honoured to have some of their families’ secret recipes feature on the new menu.  They are packed with flavour, melt-in-the-mouth meats and all made with the exact ingredients using traditional techniques from the past.  When we trialled the new dishes, we were overwhelmed with the feedback and just know that they are going to be a big hit with diners who stay with us and for those who live or work locally to the hotel too.”

The new menu features three appetisers, a choice of six starters, sharing platters, grills, seven mains, Sourdough pizzas and home-cooked desserts. There is also a diverse choice of vegetarian and vegan dishes, meaning there is something for everyone with the new menu.
