The Team Behind Gooey Launch Their Brand New Pasta Kitchen

Translating to mean ‘wave’ in Italian, this new pasta pop up from the team behind Gooey is very literally the new wave of Italian cuisine.

After receiving high praise from Lizzo last month, The Gooey team can seem to do no wrong and that appears to be the case yet again as they unveiled their new pasta concept ‘Onda’ to the world last Wednesday. Taking over from Caroline Martins Sao Paulo Bistro in Exhibition on Peters Street, Onda promises to be another dazzling addition to the already star studded cast that is Manchester’s Italian food scene.

At the helm for this project is Sam Astley-Dean who headed up their cult favourite pizza pop up ‘Rise’. His vision for Wave is to create a simple yet precisely executed, authentic pasta restaurant with a lean more into shareable dishes with nods to the classics.


The Onda menu already looks exciting with six small pasta dishes made to share on the menu, these include timeless classics such as cacio y pepe, pesto cavatelli, scallop and crab raviolo, and beef cheek ragu pappardelle.

They’ll also be serving up ‘sharing trays’ on a daily basis, from these you’ll be able to choose from lumachealla vodka topped with nduja and heaps of parmesan or the gnocchi gratinati topped with pangrattato.

Speaking to the Manchester Evening News, head chef Sam Astley-dean said “We’re incredibly excited to finally be sharing Onda with the world. Our fantastic team have all brought different inspirations and perspectives to our new kitchen - it’s great to be able to bring something new to Manchester, and in such a brilliant venue, too! I can’t wait for everyone to see what we’ve been working on.”

Exhibition is open Wed - Sun from 12pm till late, with the kitchens remaining open until 9pm so there’s plenty of time to enjoy.
