IT’S a leap from spicy bánh mì and Vietnamese summer rolls to ‘guilt-free’ baking but that’s happening in the Arndale Market as award-winning streetfooders Viet Shack open a second site, Simone’s – The Healthy Baker.
Nelson Lam of Shack, which won Best Cheap Eats at the 2014 Manchester Food and Drink Awards, has joined forces with ex-yoga teacher Simone Yau, who is overseeing the creation of healthy versions of favourite desserts, no added refined sugar or butter. Indeed most will be fat-free and cater for vegans and gluten-free diets.
Her raw cake specialities are made up of nuts, fruits and coconut mil, with no flour, butter, wheat, sugar or dairy used. Alongside, sourdough sandwiches feature homemade sauces such as peanut and wasabi mayo.
