Young star chef to shine at The Mark Addy

24 March 2010

Lisa Higginson

A budding chef is set to showcase his talent for taste when he takes over the kitchen of a popular Manchester restaurant. As part of the city’s Young Star Chef series, The Mark Addy is giving 19-year-old Paul Costello the opportunity to prove himself behind the hotplate and cook a special menu for customers next Wednesday (March 31).

The keen chef will serve up his interpretation of wholesome English dishes using locally-sourced produce under the direction of Mark Addy executive head chef Robert Owen Brown. Paul has been working alongside Rob since the renowned chef took over the Salford dining pub in November 2009, and has continued to impress with his enthusiasm, patience and interest in enhancing his culinary knowledge and skill set.

The £25 Young Star Chef menu for the event is as follows:
7am Quails Eggs
Cold Smoked Herring Fillet with Beetroot Salad and Shellfish Broth
Roast Local Loin of Venison with Crushed Jersey Royals, Wilted Wild Garlic and Wood Blewit Port Wine Game Gravy
Classic English Rhubarb Trifle
Coffee accompanied by Tia Maria Ice Cream with Spooned Shortbread
