Manchester’s luxury five-star Lowry Hotel reveals new head chef and a Grey Goose terrace

The Lowry Hotel is excited to announce that it has hired a new Executive Head Chef, Manchester-born Dominic Grundy. Dom will be responsible the iconic River Restaurant and will oversee the hotel’s catering operation. 


After studying catering at South Trafford College, Dom has since worked at highly esteemed establishments including Le Gavroche, Hilton Liverpool and Panoramic 34, one of the city’s premier fine dining restaurants. Dom then travelled to Australia to learn about cooking and ingredients from the other side of the world before returning to his home turf. The Lowry management team felt that Dom’s innovative cooking skills and quick-witted positive attitude made him the perfect fit. As a fan of quality European cooking and Asian influences with a love of British seasonal ingredients, Dom has now brought modern and exciting new flavours to the River Restaurant’s menu. Guests can expect a selection of reinvented favourites as well as some inventive and unique dishes.

New main courses include roast chicken breast with puffed rice and green curry sauce; sous vide lamb rump with confit rib and sweet potato; and BBQ Beef fillet with cheek cromesqui edamame puree and pickled shallot.


On a recent tasting, we tried a delicious English pea mousse with spinach velouté, followed by char sui monkfish with nori, sesame and shrimp popcorn. We thought we'd test his skills even further by bringing along a vegan friend and Dom really stepped up to the plate by creating some memorable and delicious plant based dishes.

New desserts include poached vanilla meringue with apricot, Grand Marnier and almond nougatine; banana rum parfait with caramelised banana bread and pistachio yogurt ice cream; and Morello cherry mouse with Amarena cherry brownie and dark chocolate.


“There is no better feeling than being able to create a new menu with dishes that have been drawn from your own inspirations and travels throughout the years,” says Dom. “To embark on a new journey with The River Restaurant, at such an exciting time, is something that I am extremely proud of, and I’m thrilled to be working alongside an amazing team that share my passion for creating memorable dishes for guests to enjoy.”


And that’s not the only thing that’s new about the hotel. The Lowry Lounge and Bar and outdoor terrace has also undergone a transformation in collaboration with leading premium drinks brand Grey Goose - just in time for the summer. 

Launching Friday 8 July and staying until 31 August, guests can enjoy a selection of drinks using the spirit brand’s new Grey Goose Essences – a range of vodka infused with real fruit and cold-distilled botanical essences inspired by the Balearic Islands. 

Three exclusive cocktails using the new vodka range include a Watermelon SummerTini (£14.50) Peach Spark (£14.50) and Strawberry Spritz (£9.75)
