This Puglian-inspired pasta kitchen in the shadow of Altrincham Market Hall is a tight squeeze (30 covers, no bookings), but worth the wait, nominated for restaurant of the year in the 2016 Manchester Food and Drink Awards after barely 12 months of existence. The boys import their pastas and oils from their family’s South Italian  homeland– even the earthenware crockery they serve it out of. Check out the daily changing blackboards  for the ear-shaped pasta variety called orecchiette with a ragu alla Napoletana, a dense tangle of beef shin, pork shoulder and spicy Tuscan sausage or caponata, a hugely savoury melange of aubergine, celery, onion, capers, roasted peppers, onion and basil.

A second Sugo, equally impressive (and larger) has opened in Ancoats at Blossom St, Manchester M4 6BA.
